Aurrum Food Ambassador and leading chef Karen Martini has developed some exciting new menu items for Aurrum residents.

Karen has worked closely with Aurrum’s in-house dietitian, on-site chefs and catering staff to create the new dishes, which will be rolled out at all Aurrum residences over the coming months.

In September, Karen conducted two master classes with the Head Chef and kitchen teams at Aurrum Erina (NSW) and Aurrum Healesville (VIC) to train them on the preparation of the new menu items.

12 residents at both homes were then given the opportunity to sample some of the dishes and not surprisingly, the feedback was very positive.

Some of Karen’s delicious new creations include Crispy Potato Roesti with horseradish, Roast Chicken Noodle Soup, Greek Roast Chicken with smashed potatoes, Roman Semolina Gnocchi, Rockling Curry, Curried Tubetti with Cauliflower & Tuna, Rooty Toot Vegetable Soup, Rosewater Panna Cotta with Roasted Rhubarb & Strawberries, Pineapple Salad with passion fruit jelly and coconut cream and Apple and Blackberry crumble.

Karen said her new offerings were based on her food philosophy and passion, which is to “use great food as a way to bring people together to create memorable experiences.”
