AURRUM, Australia’s fastest growing aged care operator, has launched some exciting innovations to the Australian aged care sector in the area of fine dining at its 5 star flagship site Aurrum Brunswick.

Karen Martini, Bruce Dixon (CEO of Spotless) and Melissa Ruffa (AURRUM Group Dietitian) were part of a panel where they discussed their food philosophy during Aurrum Brunswick’s Grand Opening attended by industry representatives on Thursday evening.

AURRUM Chairman David Di Pilla opened the event saying: “Aged care residents look forward to their breakfast, lunch and dinner and these should be amongst the highlights of the day. At Aurrum, we have gone the extra mile by appointing Karen Martini as our Food Ambassador who will work with our Group Dietitian and leading Australian catering group Epicure, to make our meals true highlights that our residents will look forward to every day”

My food philosophy and passion is to use great food as a way to bring families together to create memorable experiences” said Karen Martini.

Bruce Dixon commented that Spotless was looking forward to working with AURRUM, and doing something never done before by introducing the Epicure standard of quality and dining experience to aged care. Led by award winning Chef Manager Jake Ward, the Epicure team will be preparing a selection of Karen Martini designed menu options in addition to the base Epicure menu for AURRUM Brunswick’s residents.

Melissa Ruffa took the opportunity to explain the importance of nutrition planning in aged care, where she commented that AURRUM has planned nutrient dense seasonal menus which would provide residents their nutritional requirements, but would at the same time be extremely tasty. An important part of this is to provide delicious and attractive meals that residents will look forward to eating, commented Karen Martini. “We will be looking at ways to make the dining experience special, from fresh sustainable ingredients through to the careful presentation of meals”.
